Kimchi Fries & Finding My Favorite Korea

Recently, as part of the re-launch of the K-Friends program sponsored by the Korea Tourism Organization, individuals were asked to “Find your favorite Korea”, which meant to find something related to Korea in your city, or nearby.  Since I live in the Southern US, this seemed a daunting task, but ended up being a fun experience overall!

A nearby restaurant serves what they call ‘Asian fusion’ cuisine, which includes a dish called kimchi fries. Kimchi is a traditional Korean food and is considered a staple part of a Korean diet.  According to VisitKorea.or, it’s served with every meal in Korea. It typically consists of spiced and fermented Napa cabbage or radish, but can be made with other vegetables too.

The kimchi fries dish consisted of stir-fried kimchi, bulgogi beef, cheese, mild Korean sauce, sour cream, scallions and sesame seeds, served over crispy french fries.

Prior to this, I had never tried kimchi or bulgogi beef, but they are truly delicious!  The kimchi was slightly sour and spicy, but the flavor was so unique and unlike anything I had tasted before.  Though this was perhaps not the most traditional way to try something new, it’s spurred me to look for other ways to expand and ‘find my Korea’ locally.  I’m on the lookout now for more ways to try traditional Korean foods, but I am also planning an attempt to make my own kimchi, since I enjoyed it so much.  I’m particularly interested in making cucumber kimchi!

While you might think that kimchi fries are something to have solely as a main meal, did you know that many people combine them with other mealtime items?

For example, you could create an Asian fusion of Korean and Chinese-inspired food by serving a dish containing kimchi fries and Chinese teriyaki chicken! It's always fun to experiment and create your own take on culinary favorites, don't you think?

Do you want to try making kimchi too?  You’re in luck!  Korea.net offers a video tutorial on how to make baechu-kimchi, or cabbage kimchi.

I'll keep you posted as to how my attempts on making kimchi go!

As Seen on Pinterest - The Retirement Survival Kit

One of my co-workers recently retired. I'm happy for her, because she really deserves it and everything...but I hate that she's leaving me!  I tried to bribe her into staying. I even threatened to lock her in the office and refuse to let her go.  Oddly, she didn't like that suggestion.  Since she was set on this notion of retirement, I immediately began scouring Pinterest for some sort of cute retirement gift for her. I knew I'd find something there, and I was not disappointed! Fairly soon after beginning my search, I came across the 'Retirement Survival Kit'.  (Photo from Pinterest - original pin link ) The pin was a link to an eBay auction, but of course my first thought on seeing it was "I can do that!". So I did.   I really should have taken a better photo of it. But this is all I managed to get. So, uh, ta da! I changed a few of the items around (the original link was from the UK, so some of the items weren't available)

As Seen on Pinterest: Pillar of Cloud and Fire Craft

Woo hoo! It's time for another As Seen on Pinterest post!  This time, it was a cute little kids' craft to go along with the story of Moses and the Children of Israel being led through the wilderness by the pillar of cloud by day, and fire by night. It fit nicely into one of our Sunday School lessons this quarter, so we decided to give it a whirl! Here's the original pin: You'll need toilet paper tubes, construction paper, tissue paper (white and orange), scissors and tape. It's a pretty straightforward craft, really. Cut the construction paper to cover the tube and tape it down. Then cut a generous square of the tissue paper (one in each color) and use some tape to stick it to the insides of the tube. That part is a bit tricky, but with some finagling, it can be done! And that's it! Isn't it cute? The kiddos loved them too. It was so great hearing them telling others what it was and what it signified. Unt
